Cushaw is a winter squash most commonly shaped like a bottle, usually with a slightly curved neck. It comes in a variety of colors and some varieties are striped. Originally from Mesoamerica, heirloom cushaws date back thousands of years. Cushaws come in many sizes but can reach 30 lbs under ideal conditions. They have a mildly sweet flavor and have the texture of pumpkin or delicata squash when cooked. When stored whole, in a cool dry place, they often can store through to spring.
