Chia is a pseudocereal meaning it is a grain that does not grow on grasses. It does however develop a mucilage gel that can be used for its thickening properties. Because of this, it is often added to puddings or other thick or creamy foods. Chia is native to Central America and is now used around the world for its great nutrients and health benefits. Chia is rich in nutrients, antioxidants, minerals, fiber, and omega-3 fatty acids. You can grow it as an annual herb in warm climates of hardiness zones 8-11, or as sprouts and microgreens year-round. It does develop pretty, small bell-type flowers on spikes that grow up to 5 feet tall.
