Mache, or Corn Salad, is an herbaceous annual grown as a cool-weather salad green. It gained its name as Corn Salad because it is often found growing wild in corn fields. This salad green is a great addition to your usual greens as it matures in 40-70 days, but can be harvested as a cut and come again lettuce. Even though it is a cool-weather crop, warmer areas may be able to grow it during their winter months. Corn Salad prefers full sun to part shade, depending on the local climate. You may be able to overwinter if you are in the hardiness zones 5-8.
