How to Grow Mosaic Bean
To give them a head start, pre-germinate seeds on a moist paper towel. Mosaic Bean seeds are direct sown in soil at least 60℉ where there is a low risk of frost. Grow in a warm, sunny spot. Sow indoors 2-3 weeks before outdoor planting for an earlier harvest. Be sure to harden off well if indoor sowing. Plant in waves every 3-4 weeks for multiple harvests if you live in a warm climate. Keep soil moist in the early days. Train the vines to climb strings or supports as they grow. Yard Long Beans are fairly low maintenance.
Harvesting Mosaic Bean
Harvest when pods are smooth, tender and 16-20" long. Pods, seeds, stems, and leaves are all edible!
Yard Long Bean may replace string beans in any culinary scenario. Pods can be deep-fried, stir-fried, steamed, or used in soups. Their thin size makes them cook quite rapidly. Prepare by cutting into 2" sections. Perfect for a bean salad. Lightly steam the leaves and stems, then toss with olive oil for a nutritious side.
