How to Grow Mappe Green Mung Beans
For large sprouts, sow seeds during the spring or summer in sandy soil. The location should be bright but not too hot. Broadcast seeds on soil and cover with a thin layer of growing medium. Keep uniformly moist. For smaller sprouts, use a sprouting jar indoors. Wash seeds thoroughly before planting and wash sprouts well before eating. For pod growing, sow seeds in the spring or summer after the last frost in a warm, sunny location. Keep the soil moist throughout the life of the plant. Fertilize if the leaves look pale during the midseason. Growing needs are comparable to classic green beans.
Harvesting Mappe Green Mung Beans
Hand-pick the delicious pods with a knife when they reach 3-4”. Harvest filet beans when the diameter is 1/8-1/4" at most and before beans start to bulge in the pods. Some cultures also eat immature mung bean pods which are typically cooked whole.

For the girthiest, crunchiest bean sprouts, put a weight on top of the beans as they are sprouting. This pressure will build up the necessary compounds to grow robust sprouts!
