This seasonal vegetable from Korea has beautiful heart-shaped leaves with serrated edges. They can be eaten in many different ways; pickle, sauté, or use as a wrap like lettuce! Leaves will grow from between 12 to 20 inches in size, but you can harvest them earlier if desired. Despite being called Fischer’s Ragwort, it’s not very closely related to common ragwort. Start indoors and transplant outdoors once plants are sufficiently established and outside temperatures are warm enough. Choose a planting bed with loamy, moist soil and partial sun for best results. Keep soil moist while plants grow and harvest leaves as needed. As it is a perennial, it will continue to produce for years.
Harvesting Gom Chwi
Gom chwi can be harvested as soon as plant is fairly established. Leaves are fully grown when they are approximately 12 to 20 inches in size, but you can harvest earlier if you prefer a milder flavor. Use as desired. For best results, try to avoid harvesting leaves when flowers are present on the plant. Bolting can change the flavor of your plant and make it more bitter.
Gom chwi can be used in many different dishes, just like many Korean vegetables. Try using it as a wrap and filling it with meat or other vegetables. You can also use it pickled like kimchi, or in a dish called jangajji. If you want to go a traditional route, try namul! While it’s often made with spinach, gom chwi is also great in this dish. It uses sesame seeds, soy sauce, and other flavors to make an amazing side dish.
Gom chwi can be susceptible to plants that are attracted to leafy plants like lettuce or cabbage. Leafminers and cabbage beetles may target your plants, so try preventative methods and reach out to your local extension office for treatments if necessary. Do the same for other common pests and diseases.
