Monument is a well-known Michihili type of Chinese Cabbage that has a sweet flavor and is one of the better cabbages for storage. It does take a bit longer to mature though so be sure to plan ahead. You can expect to see a 4-4.5 pound head form with an upward cylindrical shape. How to Grow Monument Chinese Cabbage
Sow your seeds in the spring when the soil is workable and temperatures are regularly above 50F. Because Chinese Cabbage seeds require a cold period (vernalization) you may want to keep your seeds in the freezer until you are ready to plant. The change from an extended period in the cold to ideal planting conditions will encourage germination as the seeds experience natural markers for the arrival of the spring season.
Harvesting Chinese Cabbage
When harvesting your cabbage head cut just above the soil surface. You can check to see if it is ready for harvest by feeling for the denseness and firm head. Cool temperatures can help this crop develop its lovely sweet taste making it a favorite for the fall season.
Because of its good storage qualities, Monument Chinese Cabbage is ideal for use in most recipes calling for the use of cabbage. Try it in popular Japanese soups and braised with meat in sukiyaki. It is also used in yosenabe, ohitashi, stir-fry, pickling, and salads.
