Parsnips are a vegetable that can be used straight from the garden when most vegetables have been destroyed by frost. In fact, a couple of frosts are essential to give the parsnip its sweet taste. Parsnip is a relative of carrots and parsley and has a taste somewhere in the middle. Parsnip seeds grow into a biennial root vegetable but are grown as an annual because it preserves the taste.
