Jicama is also known as Mau Kaeo, Chinese Potato, Mexican Potato, Mexican Yam, Mexican Waterchestnut, or Mexican Turnip. Jicama is a warm climate vining plant with crunchy flesh like a potato. In fact, you can try substituting jicama for potato as it is so similar in texture while being a healthier alternative with fewer carbs. Because it is part of the Fabaceae family this vine is great for making nitrogen more accessible to the plants in your garden as it produces nitrogen-fixing nodules in its roots. Just be sure to avoid eating anything but its white flesh. The skin, stem, leaves, and seeds can be poisonous.
