There is no need to be intimidated by avid jam-makers, you can fit right in! Did you know that freezer jam requires less sugar, is ready in far less time, and is extremely delicious? This recipe may be adapted to make other variations of this delicious mixed berry version. Although pectin-using recipes are a bit more scientific than an easy Chia Seed Jam recipe, it provides a sweeter flavor and a classic jam texture.

Jam Ingredients:

  • 1 Quart (4 cups) fresh mixed berries - I used an equal mix of strawberries, blackberries, raspberries, and blueberries.
  • 1 package of SureJell Premium Fruit Pectin 1.75oz (not all pectin brands are interchangeable, always check directions if using an alternate brand)
  • 5 cups of granulated sugar
  • ¾ cup water

Materials:

  • Cleaned and sterilized containers - totaling 6 cups
  • Large bowl
  • Small Saucepan
  • Immersion Blender or another mashing device
  • Whisk
  • Stirring Spoon

Cooking Instructions:

Step 1 - Thoroughly wash and prepare your fruit. If using store-bought berries, be extra diligent with cleaning. A great way to get rid of pesticide residue is to let them sit in a solution of water and 1-2 tablespoons of baking soda for 10 minutes. Follow with a thorough rinse of water. Using fresh home-grown fruit is always preferred but be sure to wash them all the same! Cut off all strawberry tops and throw or cut out any berries that look questionable.

Step 2 - Mash up the berries well. This is where you can decide the exact amount of clumps you desire but I would discourage any very large fruit clumps. I used an immersion blender to make quick work of it. However, a potato masher, mortar and pestle, or a wooden spoon can all be just as effective.

Step 3 - Mix in the sugar with the mashed berries and let sit for 10 minutes. Stir occasionally to dissolve the sugar.

Step 4 - Halfway through the 10 minutes, combine the pectin in a small saucepan with ¾ cup of water. Whisk vigorously. Bring to a boil and simmer for 1 minute, stirring constantly. Remove from heat.

Step 5 - Add the pectin solution to the berry and sugar solution. Stir until fully combined.

Step 6 - Immediately add the mixture to your clean and dry storage containers. Be sure to leave space at the top of the containers for expansion. Label your containers with the type of jam and date.

Step 7 - Let sit on the counter at room temperature for 24 hours. Refrigerate for up to 3 weeks or freeze for up to 1 year. Let thaw in the fridge overnight before eating any frozen product.
