Dehydrated Chanterelle Mushrooms


The Cantharellus cibarius or "Chanterelle Mushroom" is golden in color, rich in taste and firm in texture, making it one of the more sought after mushrooms for cooking. 1 or 4 ounce package of dried, wild harvested chanterelles.

The Chanterelle mushroom (Cantharellus cibarius) is a meaty mushroom carrying an almost peppery taste. Chanterelle mushrooms are rare in that they keep both taste and texture very well when they are cooked, and doesn't crumble or or disintegrate like other mushrooms when cooked. They are golden and add color variety in addition to their flavor. Chanterelles are great in soups, stews and other slow cooked dishes.

Reconstituting Dried Chanterelles: Rinse the mushrooms thoroughly and then soak overnight in the refrigerator in water (or milk, optionally). Strain in a colander or strainer. As an option include the soak water in cooking to help preserve flavor intensity.
