The Black Trumpet Mushroom (Craterellus cornucopioides) is an excellent mushroom to spruce up any fish or poultry dish. Black Trumpet mushrooms (also known as "horn of plenty" mushrooms) are well known to be best after they have been dried, being that the sweet earthy tastes are heightened.

Nutrition: Mushrooms are a great source of iron, zinc, selenium, protein, fiber, vitamin B, and much more.

To Reconstitute Black Trumpets: Thoroughly rinse mushrooms. Take rinsed mushrooms and soak in 8 ounces of liquid per 1 ounce mushrooms for 20 minutes. Alternatively, mushrooms may also be soaked in milk in the fridge overnight. Strain mushrooms from liquid using a strainer, colander or other filter, and optionally keep liquid for future recipes. To store reconstituted mushrooms, keep in a dry air-tight container in the the refridgerator.
