Mung Bean - Mappe Green. Heirloom, Non-GMO. Vigna radiata. 7-10 days for microgreens and 70 days to full maturity. Warm season annual. Typically grown for their flavorful and crispy bean sprouts, mung beans are also grown to full maturity and cultivated for green beans. The plants are bushy, producing purplish-yellow flowers and curving 3" hairy pods with 7-9 beans in each. Approx 625 seeds / oz.
For large sprouts, sow seeds in spring to summer in sandy soil in a bright but cool location. Broadcast seeds on soil and cover with a thin layer. Keep uniformly moist. Harvest by cutting when seedlings reach 3-4". For smaller sprouts, use a sprouting jar indoors. Wash seeds thoroughly before planting, during growth, and wash sprouts well before eating. For green beans, prepare fertile, well-drained soil. Sow seeds in spring/ summer after last frost in a warm, sunny location. Keep soil moist. Fertilize as needed. Hand pick. Harvest filet beans when diameter is 1/8-1/4" at best and before beans start to bulge in the pods. Bean sprouts are a welcome addition to stir-fries and eaten fresh.
