Gom Chwi (Fischer's Ragwort) is a prized Korean vegetable with large heart-shaped leaves and serrated margins. It is best to pick these greens when young as they are very tender. If your harvest has stiff leaves it is best to blanch them. Like many other greens, Gom Chwi likes moist, shady areas to grow. Warm temperatures will cause this leafy plant to bolt quickly. Enjoy Fischer's Ragwort in an authentic Korean dish such as namul or pickle it for jangajji and kimehi. You can even eat it fresh in ssam.
