Radicchio is a type of leaf chicory, sometimes referred to Italian Chicory. It is a perennial that was created in 1860 into the dark red Radicchio we know today. Leaves come in shades of dark red and purple, adorning white veins that contain a pleasant bitterness and mild spice. In traditional Italian cuisine, Radicchio is grilled in olive oil or added to risotto. It has also been known to be used as a stuffing for chickens and turkeys.
