40 to 50 Days to maturity. Brassica rapa narinosa. Rosette Tatsoi Chinese Cabbage (Pak Choi) Seeds. Non-GMO, Open Pollinated, Heirloom, Annual. This specialty pak choi is quite cold-tolerant, even being able to be harvested in snow. Leaves are spoon-shaped and dark green in color. The plant stems, or petioles, are shorter than most pak choi varieties. In warmer temperatures, the plant grows erect while in cold temperatures the plant forms flat rosettes growing close to the ground. This variety of pak choi prefers mild and cool temperatures. Approx 10,000 seeds / oz.
Wait until after the last frost, then plant from spring through early summer, or in late summer through early fall. Plant about 2-3 inches apart, then thin to 8-10 inches apart after sprouting. Seeds can be started indoors about 4 weeks before the last frost and transplanted to the garden 8-10 inches apart. Keep the soil moist and fertilize as needed. Mulch will help with weeds and with keeping the soil moist. The best growing temperatures are between 60 and 70°F.
Harvesting Rosette Tatsoi
Rosette Tatsoi is fully mature at 40-50 days, but can be harvested early as soon as 20-25 days for baby greens.
Harvest by trimming 1-2 inches from the soil level. If the weather is mild, the plant should sprout again with somewhat smaller leaves.
These greens can be used like any dark greens, substitute for kale or mustard greens in any recipe. The baby leaves are terrific as a salad green. Traditionally tatsoi is used as an ingredient in soup, stir-fried side dishes, ohitashi, sukiyaki, and yosenabe.
