Pak Choi (Boc Choy) is known by many names including Chinese Celery Cabbage, Horses' Ear, White Mustard Cabbage, and Choi Sum. It is a crisp leaf that develops on white to light green stalks with a mild cabbage and spinach flavor. Some of its many names come from the Chinese meaning that translates to "soup spoon" as its leaves are cupped naturally. You can eat these crisp leaves raw if they are harvested young, however it is best to briefly cook them. The most popular cooking methods include adding them to stir-fries, steaming, or simmering them.
