Non-GMO, Open-Pollinated, Heirloom Hollow Crown Parsnip Seeds from True Leaf Market. 100 to 120 days. Good storage variety with a sweet taste that grows up to 15" long. Originating in Eurasia, the Romans cultivated parsnips and eventually they found their way to America.
For the straightest roots, use deep, sandy loams and peat soil. Direct seed heirloom Hollow Crown Parsnip seeds 1/2" deep, spaced about 1" apart. Later, thin to 2-3". Parsnips take about 3 weeks to germinate, and require moist soil prior to germination. In the fall, when the parsnips are mature, they can be left in the ground and harvested when needed. The longer they stay in the ground, and especially after a light frost, the sweeter their taste.
Various Uses for Hollow Crown Parsnip:
Parsnips grown from heirloom Hollow Crown seeds are usually cooked before eating. They can be roasted, sauteed, mashed or pureed. They can be used in stocks, and in particular, make a great root vegetable in stews or pot roasts. Parsnips can be preserved by storing in a root cellar, canning, or freezing.
